Tri colour Eggless Butter Cookies

India is celebrating its 75 years of Independence.  On 15th August 1947, India got its freedom from British colonial rule.

To celebrate this special occasion I made some delicious eggless butter cookies that represents the colour of Indian flag 🇮🇳.

It is a very simple recipe with very few ingredients. I made it eggless so that anyone can enjoy it.  The flavour of butter is prominent in those cute cookies.

  • Serves: 12 cookies

Ingredients

  • 200 grams Butter (unsalted)
  • 1/2 cup powder Sugar
  • 1 &1/2 cup Maida /All Purpose Flour
  • 1 pinch of  Salt
  • 1/4th teaspoon of powdered Green colour
  • 1/4th teaspoon powdered Saffron colour

Method

In a large bowl take 200 grams of softened butter.Whisk with an electric whisk  for a minute or until smooth and fluffy.

Add in powder sugar or icing sugar and whisk again until the mixture becomes fluffy and whitish.

Now sieve 1+1/2  cup maida and pinch of salt.

Mix it with the butter mixture with help of laddle without kneading too much.

Just mix together to make a soft dough without applying much pressure.

Cover and place the dough in the refrigerator for about 10 minutes so that it becomes pliable to handle.

Divide the dough into 3 equal parts.

Take one part and add in saffron colour powder.Mix well to make saffron colour dough.

Similarly, add in green colour to one part of the dough and mix well to make green dough.

Now we have Tri colour cookie dough ready.

Take  small portion of dough from each colour dough and roll in your palm to give cookie shape.

Place it to a lined baking tray. It’s important to line the baking tray with parchment paper or silicone mat to avoid burning of the cookies.

Make all the cookies like the above mentioned process and place in the baking tray. Keep some gap between each cookie as they will puff during baking.

Press each cookie with your fingers to flatten a little bit, don’t make them too thin.

bake them in a preheated oven at 180 degree celcius for 10 minutes.

Don’t over bake the cookies. They should be little soft when taking out from oven. The cookies should be very lightly brown from bottom.

Keep the cookies in the tray for about 10 minutes. Then transfer them to a cool surface.

Finally, store the butter cookies in an airtight container and enjoy for a week.
