Coconut Macaroons

What is macaroon

Macaroons are a type of Italian cookies traditionally made of grated coconut, egg white and sugar. Macaroons are very popular and delicious cookies, that are very easy to make. People often confuse macaroons with macaron, another very popular cookie. Though they resemble each other, there is a lot of difference between these two types of cookies.

Difference between macaroons and macarons

First of all,A macaroon is coconut based, whereas a macaron is meringue(whipped egg white) based.

Macaroons can be made quickly and easily. But to make macarons, you must have the skills and patience.

Macarons range in colour and flavours and macaroons are limited in variety.

Macaroons are crumbly in texture due to shredded coconut. Macarons are clean and smooth in texture, a type of sandwich cookies made of almond flour and delicious rich filling like ganache or jam.

Coconut Macaroon’s Recipe

Preparation time: 15 min

Baking time: 20 min/batch

Serves: 25 cookies

Difficulty level: easy

Ingredients

  • 1/2 cup  All purpose flour
  • 1/2 tablespoon  Cornflour
  • 4  large Egg whites
  • 1 cup  regular Sugar
  • 3 cups  shredded Coconut(fresh or dessicated)
  • 1 teaspoon  Vanilla essence

In a heatproof bowl add together egg whites and sugar.

Place the bowl over a simmering hot water(double broiler method) and whisk constantly.

When the mixture is nice and creamy, and slight warm to touch, remove from heat.

Add in vanilla essence and stir.

Also add all purpose flour and cornflour. Mix well.

Add shredded coconut or dessicated coconut and mix together.

Cover and keep in the refrigerator for about 1 or 2 hour to set.

Before baking pre heat oven at 165 degree C for 10 minutes.

Line a baking tray with baking sheet.

Take out coconut mixture from refrigerator, take one tablespoon of mixture and spoon on the baking sheet. Keep some distance between the cookoies. I bake them in two batches.

Bake them for about 15 to 20 minutes or until light golden brown. Have a constant eye on the macaroons while baking, when the edges starts changing colour to light golden brown , remove from oven.

Remove from oven and let cool for about 10 minutes and then transfer to wired rack.

Enjoy with tea or coffee.
