
What is Mexican Rice
Mexican rice or arroz rojo, is a Mexican rice dish which is so tasty that you can have it as anytime meal. It is very easy to prepare and excellent dish for lunch box. This rice dish is made from white rice, tomatoes, garlic, onions, red kidney beans and some vegetables.It is traditionally made by sauteing the rice in a skillet with oil or fat until it is colored golden brown. Water or chicken broth is then added, along with tomatoes in the form of chopped or pureed.
I made my version of Mexican rice with pureed tomatoes, boiled red kidney beans and vegetables like capsicum, green peas, sweet corn, carrot along with my favourite tangy fruit pineapple. It came out really delightful with slight sweet and tangy flavour.

Recipe
Ingredients
- 2 cup white Rice
- 2 medium sizes ripe red Tomatoes
- 1 big Onion
- 5-6 cloves of Garlic
- 1 small Carrot
- 1 small green Capsicum
- 1 small red Capsicum
- 3 tablespoons green Peas
- 2 tablespoons sweet Corn
- 1/2 cup boil red Kidney Beans
- 1/2 of a Pineapple
- 1/2 teaspoon Cumin powder
- 1 teaspoon Chilli flakes
- Few Black Olives
- 1 pinch Sugar
- 2 tablespoons of Olive oil
Steps
Clean and soak rice for 1/2 an hour
Cut onions, vegetables in small cubes


Roughly chop the tomatoes and make puree.

Core out pineapple flash and cut them in small pieces.


Heat 2 tablespoons of olive oil in a skillet and add chopped onion and garlic.

When onion and garlic become soft and translucent,add chopped vegetables along with green peas and sweet corn.

Stir fry for few minutes, then add tomato puree.

Mix well and fry for a couple of minutes so that raw smell of tomatoes goes off.

Add cumin powder, sugar and salt.

Mix well and add the drained rice.

Stir nicely to fry the rice with vegetables for 5 minutes.

Next add chopped pineapples and boiled kidney beans.Mix well.

Add approximately 4 cups of hot vegetable stock/chicken stock or simply water and stir well.

Cover and cook till rice cooks completely.

Delicious Mexican rice is ready now. Fluff with a spatula,add some chilli flakes and chopped olive and serve.
