
What is Hummus
Hummus is a middle eastern dip or spread, made from cooked, mashed chickpeas blended with sesame seeds paste, olive oil, lemon juice, and garlic. Hummus is very healthy, filling and delicious dip that can be eaten simply with bread or pita or even can be used as spread for any sandwiches or wraps.
Beetroot Hummus
Chickpeas (or garbanzo beans) are the base for hummus. You can use homemade cooked chickpeas for the recipe or store bought can chickpeas can also be used. For the variations of flavours, you can add a lot of other vegetables of herbs to basic hummus. I love to add coriander/parsley or roasted bell peppers to my hummus. But today I used cooked beetroot to give my hummus a beautiful colour and sweetness.
Following is the picture of different flavoured hummus which I made another day. These are beetroot hummus, coriander hummus and roasted bell pepper hummus. They taste awesome with some nachos/chips or even with salad.

About today’s recipe
With my homemade beetroot hummus, I made some delicious , beautiful and healthy breakfast toasts where I used sweet and tangy fresh pomegranate arils, red jalapeños, crumbled paneer, olives and mint leaves. I hope you will like this simple , cute and healthy breakfast toasts.

Ingredients
For Beetroot Hummus
- 1/2 cup Chickpeas/dry Garbanzo beans
- 1/4th of a medium size Beetroot
- 1 tablespoon Sesame seeds paste (tahini)
- 2 Garlic cloves
- 1 teaspoon Chilli flakes
- 1 teaspoon Cumin seeds
- 2 tablespoon Olive oil
- 1 teaspoon Lemon juice
- Salt to taste
For the breakfast toast
- 4 -5 Brown bread slices
- 1 big red Jalapeno pepper(you can use bell peppers)
- 1/4th cup fresh Pomegranate arils
- 1/4th cup crumbled Paneer
- Few Mint leaves
- Few Olives
Method
Wash, peel and cut beetroot roughly.

With little water grind the beetroot pieces to make a thin paste.

Place the grinded beetroot to a pan and bring to heat.

Cook in medium heat until the mixture comes to a boil.Remove from heat and set aside to cool.

Cook washed and soaked chickpeas with sufficient water and little salt until the chickpeas becomes very soft.

Drain to a strainer and place them to a food processor/grinder.Add in garlic cloves, sesame seed paste, cumin seeds, chilli flakes and salt.


Also pour the cooked beetroot mixture.

Add in chickpea water as necessary to grind the mixture and grind to make a thick paste.Also add in olive oil in the middle of the grinding process.

Beautiful beetroot hummus is ready now.Transfer to a bowl.

These are the toppings I am using for toasts. You can add other savoury toppings of your choice.

Toast some brown bread as per your desired level. I used a bread toaster , you can toast bread in a griddle also.

Spread prepared beetroot hummus to one side of the toasts. Be generous while spreading hummus.


Next sprinkle some crumbled paneer. You can use crumbled feta cheese also.

Next sprinkle some fresh pomegranate arils, chopped jalapeños, mint leaves and olives.


Squeeze little lemon juice from top and serve immediately.
