What is Alu(potato) Kabli
Alu kabli is a variety of chaat which is one of the most popular street food of India.

Chaat

Chaat is a savory snack that originated in India, typically served  at roadside tracks from stalls or food carts across the Indian subcontinent.With its origins in Uttar Pradesh, India, chaat has become immensely popular in the rest of the Indian subcontinent. 

There are a lot of varieties of chaats which are extremely popular like Papri chaat, Alu chaat, bhel puri, pani puri, Kachori chaat etc. The key to this scrumptious chaat is to mix a lot of ingredients and spices to make the dish that triggers all your taste buds: sweet, sour, salty and hot.

Alu Kabli

Alu kabli is a variety of chaat that is one of the famous street food of Kolkata, West Bengal. It is very easy to make recipe made of very simple ingredients like boil potatoes, chick peas or black chana, white or green grams,tomatoes, sweet and tangy tamarind sauce, herbs and a special mixed spice.

Recipe

Preparation time: 25 min(including spice roasting time)

Serves: 6

Difficulty level: Easy

Ingredients

  • 2  boiled Potatoes
  • 1/2 cup  boiled black Chana
  • 1/2 cup  boiled green or white Gram
  • 1  big Tomato
  • 1  medium sized Cucumber
  • 2  green Chillies
  • 1  big Onion
  • 1 bunch  Coriander leaves
  • 1  small lemon/ lime
  • 1 teaspoon  Chat Masala
  • 1 teaspoon  red Chilli powder
  • 1 teaspoon  Black salt
  • Regular Salt as required
  • 1/4 cup sweet and sour Tamarind sauce

For Alu Kabli Spice

  • 2 teaspoon  Fennel seeds
  • 2 teaspoon  Coriander seeds
  • 1 teaspoon  Cumin seeds
  • 1/3 tsp   Carom seeds/Ajwain
  • 2 whole dry red Chilli

Steps

Take 2 teaspoon Coriander seeds, 2 teaspoon fennel seeds,1 teaspoon cumin seeds & dry red chillies in a pan.

Dry roast them in medium heat for few seconds.

Add ajwain or carom seeds and roast until a nice aroma emits from the spices. As ajwain takes less time to roast I added them later to the pan.

Transfer to a grinder and grind to a powder.

Take 2 boil potatoes, peel and chop into small pieces.

Chop also tomato, cucumber, onion, green chillies, and coriander leaves.

Place all the ingredients of aloo kabli in a place.

At the time of serving take a mixing bowl and add a handful of boiled and chopped potato.

Next add some boiled chana and gram.

Add 2-3 tablespoons of chopped cucumber and onion.

Also add tomato, coriander leaves and green chillies.

Now add spices like aloo kabli masala, chat masala, black salt and regular salt.

Squeeze some lemon juice, I use Gandhoraj lemon which is a kind of lemon available in Bengal. It has a wonderful flavour. But of course you can add any kind of lemon juice.

Also add tamarind sauce and with a spoon mix well.

Taste the chat and add red chilli powder if necessary.

I like peanut in the aloo kabli so added some. It’s your choice whether you will add peanut or not.

Stir well to incorporate all the ingredients together.

Aloo kabli is ready to serve now. Place in a serving bowl, garnish with some chopped onion, tomato, coriander leaves, chat masala and tamarind chutney.
