Baked Chicken Roll

Baking is my passion. It’s both physical and mental therapy to me. And nowadays when all of us are in lockdown, baking is really a stress buster.

I made these rolls on the World’s Baking Day. They are perfect for anytime snack or even a good companion to any main dish. My family loved these soft and buttery rolls which I stuffed with chicken , cheese and some veggies. The stuffing can be substituted with any other things of your choice. So try this super delicious recipe for your family on your next baking venture.

Ingredients

  • 2 cup All purpose flour
  • 1/2 cup Milk+ more for brushing
  • 1 Egg, whisked (reserve 1 tablespoon for glazing)
  • 2 tablespoons melted unsalted Butter
  • 1/2 teaspoon instant Yeast
  • 1 tablespoon Sugar
  • 1/2 teaspoon Salt

For stuffing

  • 1 cup mixed Vegetables like carrot,green peas,,green beans,corn(cut carrot, bean into small cubes)
  • 1/2 cup boneless chicken cut in small cubes
  • 1 chopped medium sized Onion
  • 1-2 chopped green Chillies
  • 1 tablespoon Tomato puree
  • 1/2 teaspoon Chilli flakes
  • 1/2 teaspoon Curry powder or Coriander powder
  • 1/2 teaspoon Oregano
  • 1 tablespoon Olive oil
  • Salt to taste
  • 1 teaspoon All purpose flour
  • 1/2 cup Mozzarella cheese
  • Some Sesame seeds and Black seeds to sprinkle

Procedure

Mix 1/2 teaspoon of yeast with 1 tablespoon of sugar and 1/2 cup of warm milk in a glass. Keep aside for 7-8 minutes to broom the yeast.

When yeast brooms, add in unsalted butter and whisked egg to the mixture. Mix well.Don’t forget to reserve 1 tablespoon of whisked egg for brushing.

Take 2 cups of all purpose flour and 1/2 teaspoon of salt in a big mixing bowl.

Add in the liquid mixture in batches and start mixing together.

Make a very soft dough using the liquids.

Cover and keep the dough in a warm place of your house for 1 or 2 hours or until double in volume.

In the meantime, prepare the stuffing. For that heat 1 tablespoon of olive oil in a pan.

Add in chopped onion and chopped green chillies.

Saute for a minute and then add in the chopped veggies. Stir fry for 2 minutes. Also add in salt to taste.

Then add in chopped chicken and spices like chilli flakes, curry powder, salt and oregano.

Mix well and cook for 2-3 more minutes so that chicken and veggies cook nicely. Add 2-3 tablespoon of water in between.

Also add in 1 tablespoon of tomato puree and mix.

Add in 1 teaspoon of flour so that everything combines well.

At last add in 1 tablespoon of cheese, mix well and remove from heat. Transfer to a bowl.

After 2 hours my dough becomes double in volume.

Transfer the dough to a working surface and knead for few minutes. The dough should be soft and smooth. Add little flour if you feel that the dough is too soft to handle.

Divide the dough into 10 equal portions.

Take a portion, roll to make a thin rectangular sheet.

Place 1 tablespoon of stuffing at the one edge of the sheet as shown in the picture.

Also place 1 tablespoon of cheese and fold on both sides as shown in the picture.

Roll it tightly to make a log as shown in the picture. Place it in a baking tray or dish.

Similarly make all the rolls and place them on the dish.

Make a mixture with 1 tablespoon of whisked egg(reserved earlier) and 1 tablespoon of milk.

Brush the top of each roll with the mixture.

Sprinkle some sesame seeds and black seeds.

Cover and keep aside again for 1/2 an hour to rise the rolls again.

After 1/2 an hour, bake them in a preheated( preheat for 10 minutes) oven at 180 degree C for 25-30 minutes or until a nice golden crust forms on the top.

Delicious soft and buttery rolls are ready now.Serve them warm as snack or as a side dish for your dinner. You can also make them for lunch box.
