Caramelized Pineapple coconut Cake

Christmas is coming and it is the season of cakes, cookies and pastries. Here I am sharing a very easy, simple and delicious sponge cake with the flavour of caramelized fresh pineapple. To further enhance the flavour I added freshly scrapped coconut to my cake. It came out with soft, moist and flavourful. You just need a cup of tea or coffee to enjoy the cake.

Ingredients

  • 1+1/2 cup All purpose flour
  • 4 large Eggs (1 cup regular yoghurt for eggless version)
  • 1 cup Sunflower oil/Butter
  • 1+1/2 teaspoon Baking powder
  • 1 teaspoon Vanilla essence
  • 1 medium sized fresh Pineapple (ripe)
  • 1/2 cup regular Sugar+1/2 cup more to caramelize
  • 1/2 cup of freshly scrapped Coconut
  • 2 tablespoon Pineapple juice (optional)
  • 1 pinch of Salt

Method

Procedure to make caramelized pineapple with coconut

To a heavy bottomed pan add in 1/2 cup of regular sugar and 2 tablespoon of pineapple juice( you can add water instead of pineapple juice). Bring to boil.

Cook in medium low heat until sugar gets caramelized. Stir in between to cook evenly. The mixture will be dark amber colour when caramelized.

Add in chopped fresh pineapple and stir to mix.

Pineappple will release juice.Cook in medium heat until the mixrure becomes thick and sticky. Also add in 1/2 cup of freshly scrapped coconut.

Stir well to mix. Before removing fr heat add in.a pinch of salt. Set the mixture aside to cool.

Procedure to make cake batter

Now for the cake batter, first sieve together 1&1/2 cup of all purpose flour/maida with 1&1/2 teaspoon of baking powder.

Take a big mixing bowl and add in 1 cup of oil/soft butter with 1/2 cup of regular sugar.

With an electric hand mixture, blend them to make a creamy mixture.

Add in eggs one by one and blend well. If you don’t want to use eggs, beat 1 cup of regular yoghurt and mix.

Add in 1 teaspoon of vanilla essence and mix.

Next add in sieved flour and fold gently.

Also fold in the prepared caramalized pineapple mixture.

Preheat oven at 180 degree C cor 10 minutes.

Prepare a 9″ size round cake tin with butter paper and dust some flour on the sides of the tin.

Pour the cake batter on the cake tin and bake it for about 40 minutes or until a toothpick inserted comes out clean.

My cake took 42 minutes to bake perfectly. Your cake may take little less or more time to bake. Note that after 35 minutes of baking, check by inserting toothpick to monitor. If it is not done bake for more 5 to 8 minutes.

Set the cake aside to cool down for 10 minites. Then de mould and cut in desired shape.

You will enjoy a soft and moist caramelized pineapple flavoured sponge cake.
