
This frozen salad is super yummy and unique salad recipe. During these hot sunny day if you are longing for some icecream, once you treat your family with a frozen healthy salad for a change. I am sure you will love to have them without any guilt.

Ingredients
- 2 cup hung Curd
- 2 tablespoon Mayonnaise
- 2 tablespoon fresh or processed cream
- 1 cup puffed Rice(murmura)
- 1 teaspoon Sugar
- 1/2 teaspoon Salt
- 1/2 teaspoon Chat masala (optional)
- 1/2 cup shredded Cabbage
- 1/2 cup shredder Carrot
- 1/4th cup shredded purple Cabbage
- 1/4th cup chopped red Capsicum
- 1/4th cup green Capsicum
- 1/4th cup blanched frozen green Peas and sweetCorn
- 1 handful of chopped Coriander-Mint leaves
- Some shredded carrot, cabbage, capsicum, herbs for garnishing
Procedure
Shred and chop all the vegetables and herbs.

Pulse the puffed rice in a grinder for 2-3 seconds to make a coarse powder. If you don’t like puffed rice you can add flatten rice also.


Also, blanch green peas and sweet corn in boiling water for a minute and drain.
Take an (8×4)” size loaf tin and line it with cling film.

In a big mixing bowl take hung curd, mayonnaise, cream, sugar, salt, crushed black pepper, chilli flakes and chat masala.


Mix everything well to make a thick creamy mixture.
Now add in the powdered puffed rice in batches and mix well. This will help to give the salad a body and help to make the salad bar firm. Also, add in chopped herbs.

Now add in all the chopped and shredded veggies and peas-corn. Don’t forget to keep some vegetables and herbs aside for garnishing.

Mix well to make a thick salad mixture. Adjust the seasoning according to your taste.

Sprinkle some shredded veggies at the bottom of the prepared pan. The reason is that the bottom part of the pan will be the top of the salad bar after done.

Transfer the salad to the prepared tin. Smooth the top with a knife and tap the tin on the table for 2-3 times so that the mixture sets well.

Cover the tin with cling wrap and keep in the freezer for about an hour.
After an hour take out the tin. Remove the cover.

Remove the cover, place a serving dish on the top of the tin and invert the salad with tin carefully so that the bottom of the salad bar will place on the top (in the serving dish).
Now carefully remove the cling wrap. The beautiful salad bar is ready now to serve.
