Thin crust Cauliflower Pizza(gluten-free)

About gluten intolerance

Gluten is a protein found primarily in wheat, barley and rye. If a person has a gluten intolerance, this protein can cause digestive problems such as gassiness, abdominal pain or diarrhea.

My husband has gluten intolerance,and hence he avoids eating bread, pizza or any other food that contains gluten. And hence I try to make such food that has wheat or barley with gluten free substitute. But I also have to see that while using other gluten free ingredients, I should not compromise with the taste of the dish.

Here I am sharing a recipe of pizza that is completely gluten free and also very delicious.

Cauliflower  is in season and I love this delicious, lovely and very healthy vegetable to incorporate in my various recipes.
Today I made a pizza base with grated cauliflower. It’s  healthy,low carb and crispy thin crust pizza with tomato spread and loads of vegetables and cheese.

Recipe

  • Servings: 1 medium size(9″ diameter)pizza

Ingredients

For the Cauliflower crust

  • 1 small size fresh Cauliflower
  • 1/4th cup Besan/Chick pea flour
  • 1/4th cup shredded Mozzarella cheese
  • 1 teaspoon Chilli flakes
  • 1/2 teaspoon Oregano herb
  • 1/4th teaspoon Salt

For the pizza spread

  • 2 medium size ripe Tomatoes
  • 1 medium size Onion(chopped)
  • 1 teaspoon Ginger-Garlic paste
  • 1 small piece of Beetroot (optional)
  • 1 teaspoon Kashmiri red chilli powder
  • 1/4rh teaspoon Turmeric powder
  • 1/2 teaspoon Garam masala powder
  • 2 tablespoon Olive oil
  • 1/2 teaspoon Oregano
  • Salt and sugar to taste

For the toppings

  • Multi colour Capsicum as required
  • Small piece of purple Cabbage
  • Few Cherry tomatoes
  • Few cauliflower florets
  • Mozzarella and Cheddar cheese as required
  • 1/4rh teaspoon crushed black pepper and 1 teaspoon of olive oil to roast the cauliflower florets.
  • Chilli flakes and oregano as required

Procedure

For the pizza spread

Chop tomatoes roughly and make puree in a food processor. I added a small piece of beetroot at the time of blending to enhance the colour.

Heat 2 tablespoons of olive oil in a pan, add in chopped onion and saute until translucent.

Next add in ginger garlic paste and saute for few more seconds.

Add in tomato puree. Also add in chilli powder, turmeric powder, garam masala powder, oregano, salt and sugar.

Stir to mix well, add in 1/2 cup of water and cook in medium heat for about 10-12 minutes. When the mixture comes to a saucy consistency remove from heat.Set aside.

For the crust

Cut Cauliflower in florets.Keep aside few florets to use as topping.

Wash properly and pulse in a food processor to make crumbs.You can use grater also to make cauliflower crumbs.

Place the crumbs to a microwave safe bowl and cook in microwave for 6 minutes .

Let the crumbs cool down.
Take out, transfer them to a muslin cloth and squeeze out the juice to make crumbs dry.

Place the squeezed out crumbs to a mixing bowl.

Add in besan, cheese,salt, chilli flakes and dry herb.Besan and cheese will help to bind everything together.

Mix together with your hand and make a rough dough. You need not add water to make the dough.

Preheat oven at 200 degree C for 10 minutes.

Take a pizza tray of atleast 9″diameter ( you can use any baking tray, line with baking paper if needed).

Place the cauliflower dough to the pizza tray, spread with your fingers to make a thin round shape disk. Try to make it even from all sides.

Bake it in preheated oven for about 15 minutes or until light golden brown from the sides and top.

For the toppings,cut the vegetables like capsicums, purple cabbage, cherry tomatoes in small pieces.

Roast some cauliflower florets with little olive oil and crushed black pepper .

Now spread the pizza sauce which we prepared early over the pizza crust. Note that use pizza sauce when the crust comes to room temperature.

Next sprinkle some shredded mozzarella cheese.

Next spread all the chopped vegetables and roasted cauliflower.
At last sprinkle mozzarella, cheddar cheese , chilli flakes and oregano herbs.

Bake again in preheated oven for 10 minutes. I placed pizza tray in upper rack of the oven to avoid burning the crust from the bottom.

Take out from oven, let it keep aside for 5 minutes and then cut in triangle pieces.

Serve warm. I am.sure you will love this thin crust crispy pizza. Also a excellent way to feed children loads of vegetables without giving them heavy carbs.
