Roasted Sweet Potato Salad with Orange

Sweet potatoes are starchy root vegetables that are grown worldwide .They are sweet and a great source of fiber, vitamins, and minerals.They are also high in anti oxidant. Because of their immense health benefits I always like to add them in my family’s diet. You can have them just by boiling or roasting, but I like to make differnt salads with them . Today I am sharing a very delicious sweet and tangy salad.

Roasted Sweet Potato Salad with Orange

This sweet potato salad is very easy to make and it tastes great with little citrus flavour of orange. A perfect healthy dish that you can enjoy anytime of the day.


Recipe

Preparation time: 20 minutes

Cooking time: 20 min

Serves: 4 servings

Ingredients

  • 1  big Sweet potato(400 g)
  • 2 tablespoon  Olive oil
  • 1/2 teaspoon  Black pepper crush
  • 1/4 tsp  Salt

For salad dressing

  • 2 tablespoon  Olive oil
  • 1  Garlic clove minced
  • 1 teaspoon  Orange zest
  • 1/2 teaspoon  roasted Cumin powder
  • 1/4  th teaspoon Chilli powder
  • 1/4  th teaspoon Chat masala
  • 1/2 teaspoon  Chilli flakes
  • 1/2  of an Orange (juice)
  • 1/2  of a lime(juice)
  • 1 pinch  Salt
  • 1 tablespoon  chopped Coriander leaves
  • 4-5  sliced Almond

Steps

Take 1 big sweet potato or 2 medium sized sweet potatoes of about 400 g.

Clean, peel and chop into small chunks.

Drizzle 2 tablespoons of olive oil and 1/2 teaspoon of black pepper crush.

Mix well and transfer to a lined baking tray.

Bake them in preheated oven at 200 degree C for 20 minutes.

After 20 minutes take out the tray from oven.

Transfer to a big mixing bowl.

In another small mixing bowl add 2 tablespoons of olive oil and 1 teaspoon freshly grated orange zest.

Also add minced garlic, roasted cumin powder, chilli powder, chat masala, chilli flakes, almond slices and a pinch of salt.

Next add juice of 1/2 of an orange and 1/2 of a lime.With a fork mix everything well.

At last add chopped coriander leaves and mix.

Transfer the dressing over the roasted sweet potatoes.

Mix well so that the dressing coats the potato pieces well.

Keep aside for 15 minutes to enhance flavour and then serve.
