Dry fruit Muffins


Have these delicious muffins that are loaded with lots of dry fruits and nuts like apricots, sultanas, strawberries, walnuts and almonds . They are very easy to make and taste amazing that you will never bought muffins from store after tasting them.A perfect tea time snack for anytime.

Ingredients

  • 1 & 1/2 cup   All purpose flour + 1 tablespoon more
  • 1 cup  Vegetable oil
  • 1 cup  regular Sugar
  • 4  large Eggs
  • 1+1/2 teaspoon Baking powder
  • 1 +1/2 cup   mixed nuts and dry fruits of your choice
  • 2 tablespoon  desiccated Coconut(optional)
  • 1 teaspoon  Orange zest
  • 1 teaspoon  Vanilla essence
  • Some more nuts and fruits to garnish

Steps

Cut dry fruits and nuts into small pieces.

Take 1 tablespoon of flour and mix with the fruits and nuts just to coat nicely. It will help them not to sink in the bottom of the muffins when added.

Sieve together flour and baking powder and set aside.

In a big mixing bowl blend together sugar and vegetable oil until creamy.

Add eggs one by one and incorporate well to combine.

Add orange zest and vanilla essence. Give it a mix.

Now add the flour mixture and fold well to incorporate.

Add dry fruit mixture, desiccated coconut and mix.

The mixture is now ready.

Pre heat oven at 180 degree C for 10 minutes.

Line a muffin tray with liner.

Fill 2/3rd of each mould with the batter.

Sprinkle some dry fruits and nuts to garnish.

Bake them for about 25 minutes or until a toothpick inserted comes out clean.

I baked them in the middle rack of the oven with both the rods on for 1st 15 minutes.After 15 minutes put off the upper rod of the oven.

When done take out from the oven immediately and keep for sometime to cool.

Take out from the tray when they cool down a bit. Enjoy with a cup of tea.
