Pao bhaji flavoured Frittata

What is frittata

Frittata is an egg-based Italian dish similar to an omelette or crustless quiche or scrambled eggs, enriched with additional ingredients such as meats, cheeses or vegetables. The word frittata is Italian and roughly translates to “fried.”

What makes frittata different from the omelette

Frittatas are cooked in on the stovetop and then finished in the oven. And, unlike omelettes, frittata fillings are mixed in with the eggs in the pan rather than folded in the centre.

Pao bhaji frittata

I always love to make frittata for my family for a quick breakfast. It is really fun to make variations to my frittata. Today I am sharing a delicious and healthy frittata where I added pao bhaji flavoured sauteed vegetables to a frittata for an Indian twist.

Ingredients

  • 6 large Eggs
  • 1 tomato
  • 1 small Carrot
  • 1 small green Capsicum
  • 1 big Potato
  • 1 big Onion
  • 1 fresh green or red Chilli
  • 1 teaspoon Pao bhaji masala
  • 1/2 teaspoon Chilli flakes
  • 1/2 teaspoon crushed black pepper
  • 1/4 cup grated Cheese
  • 1/4 cup Milk
  • 1 tablespoon chopped Coriander leaves
  • Few Spring onion to garnish
  • 1 tablespoon Butter
  • 1 teaspoon tomato ketchup
  • 1/2 teaspoon Breadcrumbs
  • Salt as required

Steps

Cut all the vegetables in small pieces and grate the potato.

Heat 1 tablespoon of butter in a pan and add the vegetables.

In high heat saute the veggies for 2 minutes or until little soft. Add salt and pao bhaji masala, mix well and remove from heat.

In a mixing bowl break 6 eggs.

Beat with a fork and then add 1/4th cup of milk, salt and black pepper crush.

Mix well and add the prepared vegetables.

Stir well to combine.

Grease a baking proof round or square dish.

Transfer the batter to the dish.

Sprinkle chilli flakes, coriander leaves,grated cheese and breadcrumbs.

Dab some tomato ketchup on the top.

Bake the pao bhaji flavoured frittata in preheated oven for 20 to 25 minutes at 180 degree C.

After 20 or 25 minutes later when the top of the frittata becomes nice golden brown remove from oven.

Garnish with some more grated cheese and spring onion and serve. They are very healthy and yummy. You can also use them to make sandwiches.
