
Today, I am sharing a very easy and healthy veg side dish . It can be served in any course you like with any kind of bread or as side dish for chicken/fish.
It is also a very good way to feed kids a lot of vegetables. As mothers, we always face problems to feed our kids veggies in a healthy way. I made this vaked dish very often, and my kids love to have them even in their tiffin. Hence, I am sharing this easy recipe specially for the kids. You can make them with seasonal vegetables. I used those vegetables which are available in my panty. You can definitely use the vegetables you have or you like.

- Serves: 4-5 portions
Ingredients
- 2 cup bite-size Cauliflower Florets
- 1 cup Carrot cut into small cubes
- 1 cup green Beans cut into bite size pieces
- 1/2 cup purple Cabbage cut into bite size pieces
- 1/2 cup green Capsicum cut into cubes
- 1/2 cup green Peas (I used frozen)
- 1/2 cup Sweet Corn (I used frozen)
- 1+ 1/2 cup plain Yoghurt
- 2 tablespoon Cooking Cream
- 1 tablespoon Olive Oil
- 1/2 teaspoon Salt
- 1 teaspoon Kashmiri red chilli powder or Paprika
- 1/2 teaspoon dry Basil
- 1/2 teaspoon dry Thyme
- 1/2 teaspoon Sumac Powder/Amchur Powder
- 1/2 teaspoon Garlic Powder
- 2-3 tablespoon shredded Mozzarella Cheese
- Fresh Coriander leaves or Parsley
- 1/2 teaspoon Breadcrumbs
- 1/2 teaspoon Chilli flakes
Method
Clean and cut all the vegetables in small pieces. I used cauliflower, carrots, capsicum, cabbage, green peas, and sweet corn. You can use other vegetables also like potato, sweet potato, pumpkin, eggplant, zucchini, etc.

Place all the vegetables into a big baking dish.

Take a mixing bowl and add in yoghurt and cooking cream.

To that add in all the spices and seasonings like salt, kashmiri red chilli powder, thyme, basil and sumac . If you don’t have sumac powder, substitute it with Amchur Powder or chat masala.

Mix everything well and also add in Olive oil and garlic powder.

Mix everything well to make a homogeneous mixture.

Pour this mixture into the mix veggies and stir well so that the yoghurt mixture coats the veggies well.


Cover and set aside for half an hour to marinate.

Preheat oven at 180 Centigrade for 10 minutes.
Bake the marinated veggies for 30 minutes in the middle rack of the oven.
After 30 minutes, take out the dish and sprinkle 2-3 tablespoon grated mozzarella, chopped coriander or parsley, chilli flakes, and breadcrumbs.

Bake again for 10 minutes ot until cheese melts and top becomes light golden brown.

Delicious and healthy baked vegetables are ready now to serve.
Serve as snack or in breakfast with any kind of bread and garlic sauce. Even you can pack them as tiffin to your kids.


Note
Note that the vegetables shouldn’t be dry after baking. They must be moist from inside but still crunchy. If you use fresh vegetables, then the flavours and textures for the vegetables will be very good. If you feel that the vegetables may dry out during baking, you can cover the dish with aluminium foil while baking for the 1st half. After adding cheese, bake them without cover.
