Zero Oil Mediterranean style Baked Chicken

It’s one of the most varied cuisines in terms of flavour taste because of its herbs and spices. And the freshness is enhanced by the combo of legumes and grains.

About My recipe

Inspired from this healthy and flavorful cuisine, I am sharing today a super healthy and delicious baked chicken recipe.  Although Mediterranean cuisine uses olive oil to their dishes, I made this recipe without a single drop of oil, and you will not feel the absence of oil in the dish. It requires very less ingredients and less effort to make those flavorful dish. You can serve the.dish as one pot meal, as I added potatoes to my chicken recipe.

  • Serves: 4-5

Ingredients for Marinade

1kg  bone in, skin on chicken pieces

1/2 cup lemon juice

6 cloves garlic , minced

1 tbsp brown sugar/honey

1 tbsp dried thyme

2 tbsp paprika/kashmiri red chilli powder

1 tbsp Soya sauce

1 tsp salt

1 tsp crushed black peppers

Other ingredients

3 medium size potato cubes(skin on)

2 big red onion cubes

1.5 cup chicken stock

9-10 cherry tomatoes or 3 big tomato cubes

More salt and pepper to sprinkle

Coriander leaves and lemon wedges to garnish

Method

Take a mixing bowl and add in all the ingredients of marinade except chicken pieces.

Add in chicken pieces and toss to coat. Cover and  marinate for at least 1 hour or overnight.

After marination, preheat oven to 180C for 10 minutes.

Place potatoes and onion in baking dish, top with chicken. Pour over the chicken stock, then leftover marinade from the bowl.

Bake first for 20 minutes, then remove from oven.

Scatter over cubed tomatoes or cherry tomatoes, and sprinkle with salt and pepper. Bake for a further 35-40 minutes until chicken is golden and potatoes are cooked.

Sprinkle some chopped coriander leaves or parsley and serve. They can be served as complete meal , or you can serve them with any kind of bread.

They are super healthy and delicious with flavourful liquid or broth.

Don’t forget to serve witha lime or lemon wedge .
