Tutti Frutti Cake

What is tutti frutti

Tutti frutti is a colorful confectionery  containing various chopped and usually candied fruits, or an artificial or natural flavouring  simulating the combined flavour of many different fruits .Fruits used for tutti frutti include cherrieswatermelonraisins, and pineapple.

Tutti frutti can easily be made at home ,but I used today readymade tutti frutti. I will try to share homemade trutti frutti recipe.

Recipe details

  • Preparation time: 15 min
  • Baking time: 45 min
  • Serves: 15-16 pieces
  • Cake tin of size( 8×4)”
  • Baking paper to line the cake tin

Ingredients

  • All Purpose Flour 1 cup+ 2 tablespoon
  • Medium size Eggs 3 no.
  • Vegetable Oil 3/4th Cup+ more to grease the pan
  • Granulated Sugar 3/4th Cup
  • Tutti Frutti 1/2 cup
  • Baking Powder 1 teaspoon
  • Vanilla Essence 1 teaspoon
  • Icing Sugar to garnish

Method

Take a cake tin of size (8×4)” , grease with little oil and line with baking paper. Set aside.

Take a big mixing bowl, add in 3/4cup of vegetable oil and 3/4 cup of sugar.

With an electric hand blender , blend the mixture until the mixture becomes uniform.

Add in eggs one at a time and blend well.

Add in 1 teaspoon Vanilla essence and mix again.

Now, sieve flour and baking powder together. Take 1 teaspoon flour mixture aside to add in to tutti frutti.

Add in the flour mixture to the liquid mixture.

Mix everything with cut and fold method.

We will get a thick homogeneous mixture.

Sprinkle 1 teaspoon reserved flour to tutti frutti and mix. This will prevent them to sink at the bottom of the cake during baking.

Add in these tutti frutti to the cake mixture and mix lightly witha spatula.

Preheat oven at 180 degree C for 10 minutes.

Transfer the cake mixture to the prepared lined cake tin. Tap the tin 2-3 times on the table to remove any air bubbles.

Bake it at 170 degree Centigrade for 40 to 45 minutes or until a toothpick inserted to the middle of the cake comes out clean.

Keep the cake on the tin for 15 minutes to cool down and then dust with some icing sugar.

Demould the cake and cut in thin pieces. Serve with tea or coffee.

You can store the cake in the refrigerator for a week or can consume witin 2-3 days if stored in a airtight container.
