Hot Milk Cake served with Hung Curd Frosting and Caramelized Pineapple

On the occasion of world milk day I have made a delightful dessert made of Hot Milk cake.It’s a a butter sponge cake.This cake gets its distinctive flavor from the hot milk that is the liquid component of the batter.
I used almond flour with all purpose flour to make the cake more delicious.

To make this delightful dessert, I served the cake with hung curd frosting, caramalized pineapple and berry sauce. The outcome is very delightful with the buttery, milky , nutty flavoured cake with sweet and little tangy caramelized pineapple. The berry sauce not only gives colour to the dish, it also enhances/balances the taste of the dish.

Ingredients for Hot Milk Cake

  • 1 cup fresh Milk
  • 1+1/2 cup All purpose flour
  • 1 cup Almond flour
  • 2 cup granulated sugar
  • 2 +1/2 teaspoon Baking Powder
  • 4 large Eggs
  • 1/2 cup soft unsalted Butter
  • 1 teaspoon Vanilla Essence

Ingredients for caramalized Pineapple

  • 1+1/2 cup chopped fresh Pineapple
  • 2 tablespoon Butter
  • 3 tablespoon brown Sugar

Ingredients for Hung Curd frosting

  • 1 cup Hung Curd
  • 2 tablespoon Icing Sugar
  • 2-3 drops Vanilla essence

Ingredients for berry sauce

  • 4-5 frozen Berry (I used blackberry, you can use strawberry or raspberry or even pomegranate arils)
  • 2 tablespoon Sugar
  • 1 tablespoon Water
  • 1 pinch of Salt

For garnishing

  • Icing Sugar
  • Mint leaves


In a large mixing bowl, beat eggs on high speed for 5 minutes or until thick and fluffy.

Gradually add sugar and blend well to incorporate.

Whisk until the mixture becomes fluffy and pale yellow in colour. Also add in vanilla essence.

Sieve together all purpose flour, almond flour and baking powder.

Slowly add and incorporate the flour mixture to the egg mixture.

Don’t add in entire flour mixture at a time. Add in batches and mix well.

In a small saucepan, heat milk and butter just until butter is melted.

Gradually add the milk mixture to the cake batter, mix just until combined. Milk shouldn’t be very hot but about 70-80 degree C hot.

Hot milk cake batter is ready now. The consistency of batter should be thick but flowing.

Pre heat oven at 160 degree C for 10 minutes.

Grease and line a rectangular baking dish of size (12×9) inch.

Pour batter (upto 2/3rd) into a greased and lined baking pan.

Bake for about 35 minutes in the middle rack of the oven or until a toothpick inserted comes out clean.

Delicious, soft, moist and perfectly textured cake is ready .

You can simply enjoy the cake after coming to room temperature.

But I want to make a healthy dessert out of this hot cake. So I made caramelised pineapple, hung curd frosting and berry sauce.

Method to make caramelized pineapple

Trim and cut fresh pineapple into small bite size pieces. I used 1 and 1/2 cup of them.

Heat a pan with 2 tablespoon butter.

Add in 3 tbsp of brown sugar and stir well in medium heat.

When sugar dissolves , add in pineapple pieces.

Mix well and cook in medium heat until the mixrure becomes thick, glossy and amber colour.

Remove from heat and set aside to cool.The mixture will thicken after cooling. So remove from heat when little juice remains.

Method to make hung curd frosting

For hung curd frosting transfer 1 cup of regular curd to a strainer and keep in the refrigerator for an hour or two.
You will get thick and creamy hung curd.

Mix 2 tbsp of icing sugar and2-3 drops vanilla essence and it is ready to use. Keep in the refrigerator until use.

Method to make berry sauce

For berry sauce mix together 4-5 blackberries/strawberries with 2 tablespoon of regular sugar and 1tablespoon of water.

Bring to heat and cook until berries become soft and release juice. Also add in a pinch of salt. The juice should be thick. Remove from heat.

Now everything is ready. So we can serve now. First, cut the cake in square pieces.

Sprinkle some icing sugar on top. Take out individual pieces and serve topped with hung curd frosting, caramelised pineapple ,berry sauce and mint leaves.

My plating

Take 1 piece and place to a clean white serving dish.

Top with 1 tbsp of hung curd frosting, caramalized pineapples and berry pieces for colour.

Brush some berry sauce in the sides. Also place some pieces of caramalized pineapple pieces, black berries, and mint leaves.

Finally sprinkle some more icing sugar ane serve .
